Now that the Corn season is upon us, this is one recipe that you must try especially If you are looking for something new and creative to make with corn apart from just eating it off the cob.
So today, I want to show you how to make CORN FRITTERS.
You know eating corn by itself can be really boring at times.
Making a fritters out of it is one of the fastest ways to turn corn into a hearty meal for breakfast, Lunch and Dinner.
Your kids will also love this creative and delicious snack too, because of the sweet and enjoyable ingredients used in making it.
What are Corn Fritters?
Corn fritters are a quick corn cake batter loaded with corn Kernels, Flour, Mixed Pepper, Sugar, Sugar and other ingredients that’s gently fried in a drip of oil.
They are basically small fried cakes that can be sweet or savory and held together by a thick batter.
The result you’ll have is thin, crispy exterior with a soft and moist center that’s super yummy.
also, this fritters can serve as a meal on their own or as a side dish for other things.
This is a whole new way to enjoy sweet corn especially with its abundance in this season.

Corn Kernel ( Lightly Boiled)
Flour (All Purpose)
Pour the flour in a bowl, I specified earlier that I used the all purpose Flour for this recipe, but if you can use some Corn Flour instead if you have it.
The reason why we are using flour is to bind the mixture together and to prevent it from falling.
Pour the Chopped Onions .
Add the chopped red and green pepper.
Then some melted butter and liquid milk.
In case you are wondering how I got the melted butter, just heat up any cooking margarine/butter in a hot pan to get it in it’s liquid form.
Add the egg. You don’t need a lot. Just one egg is enough, but depending on the quantity you are making tho.
Stir the batter before adding the corn kernel. Now stir again thoroughly the batter and the Corn Kernel.
This is where the magic happens. The corn fritters are made crispy by light pan frying.
Two things will guarantee you a crispy corn fritters: a wide, Non Stick Pan and hot oil.
No dear! These fritters aren’t deep-fried, but you need at least a little oil enough to grease the pan.
Heat the oil for several minutes before adding the fritter batter to the pan, one spoonful at a time.
Don’t overcrowd the pan! You’ll get crispier corn fritters frying fewer at a time.
Just do a light fry for a couple minutes on each side. If you want them a little crispier, fry them for a little longer.
I love a nice crisp, so I let them do their thing until I see a darker brown surface– maybe 3 minutes on each side.
